Baked Sweet Potato with Feta
Ingredients
1 Sweet Potato
2 oz Feta cheese
1 spring onion
½ tablespoon olive oil
1 tablespoon orange juice
Ground black pepper
1 teaspoon of cumin or caraway seedsServes 1
Method
Preheat the oven to 180c (350f gas 4)
Spear each potato with a metal kebab skewer to speed up the cooking time.
Place potato in the oven to cook. (About 30-40 minutes depending on their size)
While the potato is cooking, chop or crumble the feta cheese into a small bowl. Finely chop the spring onions and toss them in with the feta cheese
Add the olive oil, orange juice and black pepper.
Roast the seeds in a small pan over a medium high heat to give a more intense , toasted flavour and then stir into the feta
When the potato is cooked, cut it open and drizzle over a tiny amount of olive oil and scatter the feta mix on top.
